Ingredients:
• 1 (18.25 oz.) Lemon Cake Mix
• 2/3 cup Sundrop (may use Cherry Sundrop if desired)
• 1/3 cup vegetable oil
• 3 large eggs
• 1 11 oz. can mandarin oranges (drained)
• 1 15 oz. can crushed pineapple (undrained)
• 1 3.4 oz. package vanilla instant pudding mix
• 1 12 oz. frozen whipped topping (thawed)
Directions:
Beat first four ingredients in a large bowl at medium speed with electric mixer until well blended.
Stir in oranges. Pour batter into greased and floured 9 x 13pan. Bake at 350 for 25-30 minutes or until a wooden pick inserted into center comes out clean. Let cool completely.
Stir together crushed pineapple and pudding mix. Add whipped topping and stir. Spread mixture on cake. Chill 3 to 4 hours. Garnish with pecans if desired. Store cake in refrigerator.
